Split Pea Soup - crockpot

Ingredients
1/2 T. olive oil1 medium yellow onion, chopped2 large carrots, sliced into 1/2 moons2 celery sticks, sliced2 1/4 c. split peas1 tsp. thyme1 bay leaf7 c. vegetable broth1 tsp. saltpepper to taste
Directions
Heat oil in skillet over medium heat. Add onion and carrots and cook, covered for 5 minutes to soften.
Transfer to crockpot. Add remaining ingredients and cook on low for 8 hours.
Discard bay leaf and serve.
