Tilapia Corn Chowder

1/2 lb Tilapia filet, cut into bite sized pieces1 cup no salt added canned corn1 large Russet potato, diced1 celery stalk, diced1 small onion, diced2 garlic cloves, minced1 tsp non-dairy creamer1 tsp chicken bullion seasoning1 tbsp instant mashed potatoes (dry)2 cups waterbuttery spray
1- Cook celery and onions with some buttery spray on high heat until translucent. Add some water if necessary and cook until water dissolves.
2- Add potatoes and water and cook until tender then add tilapia pieces.
3- Drain canned corn and add to mixture along with milk, bullion seasoning, creamer, and instant mashed potatoes.
4- Simmer on low heat for ten minutes. Adjust to taste. May want to add additional spritzes of buttery spray along with pepper.
Makes about 3 1-cup servings

Delicious chowder. I did add 1/4 cup chicken stock when sauteing the onions and celery and added another 1/3 cup of stock after boiling the potatoes. For a few extra calories it adds a lot of bang for the buck. Much richer flavor. The instant mashed potatoes make it so creamy. Will make again. Yum! - 4/2/11
