Alber's Sweet Corn Bread Muffins

1 1/2 c. white flour2/3 c. white sugar1/2 c. yellow cornmeal1 T. baking powder1/2 t. salt1 1/4 c. lowfat milk2 large eggs1/3 c. canola oil3 T. butter, melted
Preheat oven to 350 degrees
Prepare 16 - 18 muffins cups
Combine flour, sugar, cornmeal, baking powder and salt in large mixing bowl.
Whisk milk, egg, oil, and melted butter in separate bowl or large measuring cup.
Add wet ingredients to dry ingredients; stir just until blended.
Pour into muffin cups about 2/3 full.
Bake for 18-20 minutes or until toothpick inserted comes out clean. Serve warm with a bit of honey!
