Buffalo Chicken Mini Fillo Cups

8 oz of cooked white chicken, diced, shredded small. (I used the white meat of a chicken rotisserie from the grocery store)1 stalk of celery diced small, almost minced1/2 cup of hot sauce1 oz of Fat Free cream cheese2 pkgs. - of Athens Mini Filo ShellsFat Free Cheddar CheeseLight Blue Cheese optional)
Preheat oven to 350 degrees per the instruction of the Filio Cups.
Mixture:
Cut your chicken into tiny pieces almost ground chicken looking. In a mini food processor dice up your celery until it's tiny, like minced garlic. In a medium bowl add chicken celery, cream cheese and hot sauce. Mix together until well blended.
Place mixture in Filio Cups and top with a little cheddar cheese and bake for 5 to 8 minutes.
Serve with Light Blue Cheese or Ranch Dressing on the side. Oh and the calories maybe less, since I had plenty mixture left over! Perfect for taco's or a wrap!
