Cucumber Party Sandwiches

* Whipped Cream Cheese, 16 tbsp * Greek Yogurt, Plain, 2 tbsp * Olive oil mayo (reduced fat mayonnaise), 2 tbsp * Bread, rye, 15 slices (1 oz per slice) * Dill weed, fresh, 4 tbsp chopped * Fresh Chives, 8 tbsp chopped * Cucumber (peeled), 60 slices (about 1/8" thick)
In a large bowl, mix together the whipped cream cheese, olive oil mayonnaise, Greek yogurt, dill and chives. Let that stand for 30 minutes.
In the meantime, toast the rye bread slices.Cut each slice of rye bread in half diagonally, to make 30 pieces.
Next, spread the the cream cheese mix on to the toast. Top each with two slices of the cucumber.
Serve right away, or cover and refrigerate until serving. Makes 30 servings.
