Spicy butternut squash soup

Ingredients
2 tbsp canola oil3 garlic cloves chopped1 large onion chopped2 tbsp fresh ginger root grated1 large butternut squash peeled and cubed2 cups coconut milk, unsweetened5 cups watergreen chili pepper to tastesaltpepper, blackcumin, 1 tsp1 tbsp mint chutney
Directions
makes 8 one cup servings,

mix all ingredients and cook until squash is very tender. I cooked in crock pot on low all day. for smoother soup, after cooking put in blender or food processor and strain out large chunks.
