28 oz Free-Range Boneless, Skinlss Chicken Breast1 pkg Mozzarella, shredded1/2 pkg Colby Jack, shredded1 large can Enchilada Sauce1 pkg Taco Seasoning8 oz Cream Cheese2 can Rotel 8 Large Tortillas
Serving Size: 8 Enchiladas
Cook chicken breast; meanwhile with fork mix Rotel and Cream Cheese until creamy.
When chicken breast is mostly cooked, dice and season according to packet directions.
Add seasoned chicken to Rotel mixture. In glass baking dish roll up 1/2 cup filling in each tortilla. Pack tightly. Pour enchilada sauce over top and sprinkle on cheese.
Bake at 400 until cheese is melted. Enjoy!
