Warm Potato Salad with Lemon Vinaigrette

Ingredients
1 lb red tomatoes, large dice1.5 c green beans, cut in half~9 Sun dried tomatoes halves, cut into piecesVinaigrette Juice from 1 lemon1/4 of olive oil1 tsp honey1 tsp dijon mustard1 tsp herbs de provence or dried rosemarySalt and pepper to taste
Directions
Boil the potatoes until tender, adding the green beans during the last 5-10 minutes of cooking (depending on how crisp you like the green beans.

While the potatoes are cooking whisk together the vinaigrette ingredients.

Drain the potatoes and green beans, stir everything together in a large bowl. Enjoy!

Of course for less fat you can use less oil, but I would recommend using at least 2 tablespoons of olive oil.
