1 1/2 cups chopped fresh asparagus, divided6 cups cubed sourdough bread, divided1 1/2 cups diced ham4 eggs, beaten2 1/2 cups skim milksalt and pepperOptional shredded fat free cheddar on top
Blanch asparagus in boiling water; drain well. Spray a casserole dish with non-stick spray. Spoon 1 1/2 cups of the bread cubes dish. Sprinkle half of the asparagus over the bread. Top with another 1 1/2 cups of bread. Cover with the diced ham. Top with another 1 1/2 cups bread cubes then layer remaining asparagus over that. Cover with more bread. Whisk together the eggs and milk; season with salt and pepper. Pour egg mixture evenly over the layers. Cover with foil and chill for 3 hours, or overnight to cook and serve the next morning. Bake, uncovered, at 350° for 1 hour. Put cheese on for last 10 minutes if you care to. Let stand 10 minutes before serving.
