Bittersweet Chocolate Cake

8 ounces bittersweet chocolate10 Tbs butter, unsalted3.5 Tbs whole wheat pastry flour4 eggs, separated2/3 cup sugar
Serves 8
Melt chocolate and butter in double boiler. In a separate bowl, whisk egg yolks and sugar. In a third bowl, beat egg white until stiff but not dry. Mix chocolate mixture with yolk mixture. Fold in whites. Bake in a 9" cake pan (greased or lined with parchment). Bake at 325 for 30 minutes. Let cool completely in pan. Serve decorated with berries or confectioner's sugar.
