Endive, Apple & Walnut Salad

Ingredients
1 head Belgian endive, trimmed1 apple, cored and cut into 1/2-inch dice 1/4 cup Swiss cheese, cut into 1/2-inch dice1/4 cup chopped walnuts, toastedsnipped fresh chivesFor the vinaigrette:2 Tbsp. rice wine vinegar1 Tbsp. canola oil1 Tbsp. extra-virgin olive oilPinch of sugarPinch of salt
Directions
Serves 2.

Cut endive in quarters lengthwise, then slice crosswise into 1/2-inch pieces. In a medium bowl, toss toss endive, apple, walnuts and Swiss cheese.

In a lidded jar, add vinaigrette ingredients; cover and shake briskly to combine.

Drizzle vinaigrette over salad to taste; toss gently. Add snipped fresh chives and several grinds of fresh cracked pepper.

    In my opinion (I haven't made salad yet) this is a 2-serving sized salad. I'll add that I do have diabetes and usually my food allowance gives me 1/2 apple and lettuces about 1 1/2 cups lettuce. The full salad would be a very generous amount for a single person. - 11/8/12

    Is this a 1 or 2 serving salad? It says "serves 2" and "number of servings: 1"...which is it? 245 cal is perfectly acceptable for a salad while 500 seems a bit excessive... - 10/8/12

    Sounds delightful, but that's an enormous number of calories for one salad serving! 13 Points for Weight Watchers. Sadly, not an option for me. However... I am inspired to combine endive and apples in some way. I can taste it now. - 2/1/11
