Cucumber, Mango, and Spinach Salad

Ingredients
1 bag or bunch of spinach1 mango, peeled and cut into bite size pieces1 large English cucumber, peeled and sliced6 scallions, thinly sliced1/2 cup chopped fresh basil leavesjuice of 1 lime1/2 cup seasoned rice vinegarfresh cracked black pepper to taste
Directions
Serves 10 to 12
Wash and drain spinach, tear into bite-sized pieces if necessary, and put into a large serving bowl.
Toss mango, cucumber, scallions, and basil in a medium bowl.
Dress with lime juice and vinegar.
Arrange mango mixture on spinach and sprinkle with fresh cracked black pepper
