Roasted Herb Potato Wedges

Ingredients
2 tbs dijon mustard1 tbs olive oil1 tbs rosemary, chopped1 tbs oregon, chopped1 tbs parsely, chopped1/2 tsp table salt1/2 tsp black pepper1 LB new potatoes (white or red skinned, cleaned and cut in half)
Directions
Preheat oven to 425 degrees
Combine all ingredients, except potatoes in a small bowl
Place potatoes in a large Zip Lock bag and then add the mustard mixture, close the back and shake to coat.
Pour contents of bag into a shallow baking pan that is coated with nonstick cooking spray.
Baking, turning occasionally, until potatoes are tender, about 25-30 minutes. 4 side servings
