Wheat Berries Salad

Ingredients
1/2 cup uncooked wheat berries1 cup tomatoes chopped1/2 cup onion chopped1 can black beans rinsed and drained1 cup frozen shelled edamame thawed2T red wine vinegar3T olive oilsalt and pepper to taste
Directions
Cook 1/2 cup wheat berries according to directions on package. Chop tomatoes and onion, place in bowl and add edamame. Rinse wheat berries under cold water when done and drain in fine mesh strainer. Add to vegetables. Add rest of ingredients and mix well. Eat right away or refrigerate up to 8 hours ahead.
