Easy Homemade Tomato Soup

Ingredients
2 TB flour2 TB olive oil4 cups V8 or tomato juice2 cups skim milksalt and pepper to taste1/4 tsp to 1/ tsp Onion powder optional
Directions
makes 6 1 cup servings
Create a roux by mixing flour and oil over medium heat in a saucepan.
Slowly pour in juice once roux is lightly browned. Add salt, pepper and onion powder.
Bring to just below a boil. Turn off heat. Add in milk and serve.
