Southwestern healthy omelet!

Ingredients
1 large Egg 2 Egg whites (equaled to 2 large eggs)2 tbsp. Salsa 1 oz Mozzarella Cheese (shredded)Cilantro (fresh is preferred, frozen can be a bit sticky and add extra moisture to the omelet)1/4 c. Green Chili Peppers
Directions
*Preheat pan, spray with olive oil cooking spray.
*In a bowl Mix together the Egg and Egg whites.
*In a separate bowl mix together Salsa, Cilantro and Green Chili Peppers
*Measure out Mozzarella for easy access when cooking
*Pour Eggs into pan an allow then to cook thoroughly but not completely --cooking an omelet! Bottom of Eggs should be white and cooked but still runny on top
*Add Salsa, Cilantro and Pepper mix
*Fold omelet and flip
*Sprinkle cheese onto of Omelet and cover pan with lid
*once cheese is melted check to make sure the middle is cooked (should be!)

If Omelet is thoroughly cooked than your meal is ready! Enjoy! What to make it more Southwestern, add some tortilla chips or wrap omelet in tortilla for a wonderful breakfast burrito!

Makes 1 serving (but enough to share or divide into to helpings!)
