Eggs Florentine

Ingredients
4 poached eggs4 slices of whole wheat bread, toasted1.5 cups cooked spinach, squeeze out all the water2-3 cloves of garlic1 Tbsp olive oilSalt to tasteCayenne pepper to dust eggs (optional)
Directions
Saute the spinach and garlic in the olive oil for 3-4 minutes. Divide in four parts and place on top of each piece of toast. Top with the poached eggs, sprinkle with salt and cayenne pepper, if desired, and enjoy.
Makes four servings, on piece of toast each.
