Ingredients
2 eggs1/4 cup oatmeal1/4 cup fresh mushrooms cut up1/4 cup spinach fresh and torn1/4 cup salsa or to tastewater1/4 cup cheddar cheese or to taste
Directions
Mix all ingredients except the cheese in a microwavable bowl or dish. Add water to make wet about 1/8 of a cup. Put in microwave and cook on high for 2 minutes. Add cheddar cheese to top and microwave about 1 minute longer. Makes one serving.
