1/2 c. Egg Beaters 1 Corn Torillas (med.) torn into small pieces2 T chopped Onion1/4 c. chopped Tomatoes1/2 Jalapeno, no seedsPam cooking spray
After cutting up the tortilla, onion, tomato, and jalapenos, heat up a medium sized pan sprayed with Pam. Add corn tortilla bits and toast them until they are no longer soft. Add onions, tomato and jalapenos and heat all thru. Once heated, add egg beaters and cook until the eggs are set. Voila! Breakfast! For even a faster meal, omit the onions, tomatoes and jalapenos and use bottled salsa instead.
