Sweet Mini Peppers & Turkey Sausage

1 bag mini peppers (13 servings)2 cloves garlic, sliced1 small onion, diced4 turkey sausage links1 cup sun dried tomatoes in oil1 15 oz. can tomato sauce1/2 tsp. fennel seedsalt and pepper to taste
Brown the sausages in olive oil. Remove and put in crock pot. Slice and sautee the garlic in the same pan. Sautee the onion. Cut the tops off the peppers. Throw all the above in a crock pot. Finely grind the sundried tomatoes in a food processor and add to crock pot. Add the fennel seed, tomato sauce, and a little water. Stir to combine/mix. Cover and cook on low for 4 hours.
