1/3 cup whole-wheat orzo3 ounces grilled chicken breast1/2 cup halved cherry tomatoes1/4 cup diced cucumber1/4 cup diced red bell pepper2 radishes thinly sliced2 tablespoon black beans2 tablespoon corn1 teaspoon olive oil2 teaspoon red wine vinegarjuice of 1 limepinch of cuminpinch of chili powder1 tablespoon chopped fresh cilantro (optional)
combine cooked whole wheat orzo, 3 ounce grilled chicken breast diced, halved cherry tomatoes, diced cucumber, diced red bell pepper, sliced radishes, black beans, corn. Whisk together olive oil, red wine vinegar, lime juice, cumin, chili powder and cilantro. Drizzle over salad.
