Tortellini with Mushrooms

Ingredients
1 pound mixed mushrooms2 TB olive oil4 tsp minced garlic3/4 tsp dried thyme1/2 tsp salt1/4 tsp black pepper1/2 C Madeira or dry sherry9 oz cheese tortellini1 TB extra virgin olive oil*parmesan cheese shaved
Directions
CUt fresh mushrooms as desired.
Heat 2 TB olive oil in a large non stick frying pan over medium high heat. Saute mushrooms until golden brown, about 8 minutes. Add 4 tsp minced garlic and 3/4 tsp dried thyme to mushrooms and cook 1 minute. Season with 1/2 tsp salt and 1/4 tsp black pepper. Add 1/2 C Madeira or dry sherry, reduce heat, and simmer 5 minutes. Cook 9 oz cheese tortellini per package directions. Add pasta to warm mushrooms and simmer 2 minutes. Stir in 1 TB extra virgin olive oil. Sprinkle with shaved parmesan if desired.
