Franz's Thai Coconut Rice

Ingredients
1.5 cups of Jasmine rice2 cups of Coconut milk1.75 cups of water2 tbs, unsweetened coconut milk1 tsp. butter
Directions
Combine ingredients in pot and set over medium high heat, stirring occasionally to keep from sticking to the bottom of the pot and burning.
Once the coconut milk has begun to bubble, reduce heat to low. Cover tightly with lid and let simmer 15 - 20 minutes, or until most of the liquid has been absorbed by the rice. To check, pull aside rice with fork. If most of the coconut milk water is gone, go on to the next step.
Replace the lid and turn off the heat. Let steam an additional 5 - 10 minutes, or until you are ready to eat.
