Ingredients
2 red bell peppers4 oz or half cup of canned chilies (you can substitute hotter chilis if you like--I'm a wimp)1 Tbsp sunflower oil1 lb elk or venison1 onion, chopped3 cloves garlic2 carrots chopped3 cups hominy3 cups water3 cups beef broth2 tsp salt (or to taste)1 tsp pepper (or to taste)1 cup chopped endive or other bitter green
Directions
Heat the oil.
Add meat, onion and garlic and cook until meat is browned and onions are soft.
Put all the ingredients *except the endive* into a crock pot. Set on low for 6 or more hours.
Add the endive just before serving.
