For The Cake: 6 large Eggs, fresh200mL Olive Oil1 tbsp Honey 300 grams Brown Sugar, 200mL Regular Coffee, 350 grams Five Roses Cake and Pastry Flour1 tbsp Baking PowderFor the 'sauce':200 grams Brown Sugar, 200mL Water
Cake:
Mix the eggs, honey, olive oil, and brown sugar very well. Add coffee, flour, and baking powder, making sure that it all gets very well blended. Pour into a cake pan with the hole in the center (like for a bunt cake). Bake in a medium heat oven for about 40 mins, testing with a toothpick. When ready, flip the cake out of the cake pan, and pour the following 'sauce' over it.
Sauce:
Boil the water and brown sugar for about 5 mins, then pour over cake, and let cool.
Makes approx. 20 thin slices.
