1 onion,.1/2 cup black beans1/2 cup cooked brown rice1/4 cup cornGreen Peppers - optional 2 tblsp CilantroCumin powder - optional3 tblsp Sour Cream 4 tbsp Salsa
Grill 1 onion & 1 Green pepper until glazed.
Add 1/2 cup black beans
Add 1/2 cup cooked brown rice
Add 1/4 cup corn
Add Cumin powder or other spice - optional
stir for a couple minutes
throw in some Cilantro
Put in a bowl, add Sour Cream & salsa and enjoy.
Makes 1 satisfying serving!
