Eggplant Roulade

Ingredients
.7 oz Eggplant (one slice about 1/8"thk.).2 oz Prosciutto Ham ( 1/2 very thin slice).1 oz Hoffman's Smoked Swiss Cheese ( Cut 1/4" sq. stick).25 tsp Balsamic Glaze ( reduced balsamic vinegar to glaze)
Directions
Slice one medium size eggplant cross-ways into 1/8" thk. slices. Slice Swiss cheese into 1/4" sq x 2" lg. sticks. Prosciutto ham slices should be very thin (chip chop) works best.
Grill Eggplant 3min both sides, place one stick of cheese and half slice ham onto eggplant slice and form a roulade using a wood toothpick to hold. Prep all rolls and place on a lightly greased baking sheet. Place under oven broiler on high heat and broil until cheese melts and ham end become crispy, about 5 min.. Serve with Balsamic glaze dipping sauce. Drizzle glaze over each roulade as desired.
Note: we serve balsamic glaze on the side in a ramekin so guests can apply with a teaspoon as desired.
