Tomato Cream Chicken

Ingredients
18 ounces diced cooked chicken breast1 TBSP Olive OilSalt & pepper to taste3/4 c tomato paste1 tbsp dried tarragon1 1/2 c chicken broth6 tbsp balsamic vinegar2 tbsp fat free half & half
Directions
Heat olive oil in a skillet, brown diced chicken in oil and season with salt and pepper. Remove chicken from skillet and keep warm. Add tomato paste and tarragon to skillet. Cook briefly, stirring constantly. Whisk in chicken broth and balsamic vinegar and cook until thickened. Stir in half & half and reheat to simmering. Add chicken to sauce and bring back to temperature. Serve with whole grain pasta or brown rice.
