Ingredients
1 Flat bread2 T. hummus5 large black olives, sliced or whole1 small cucumber, sliced lengthwise1/4 red bell pepper, sliced3 oz. oven roasted deli turkey1 Romaine leaf
Directions
Heat flat bread slightly in toaster to warm & soften. Spread with the hummus, then sprinkle with the olives. Next arrange the cucumber & bell pepper, then top with the turkey. Lay the lettuce on top. Leave open-faced or fold in half. Makes 1 serving

    Made this for a gluten free kid's birthday party. It was a hit! I made my own gluten free hummus and I left out the bread. I rolled the turkey breast around the rest of the ingredients. No one missed the bread and the kids enjoyed it. Will make again. - 7/21/11
