Chickpea Garam Masala with Spinach and Tomato

Ingredients

1 cup - rice, long grain14 oz - crushed tomatoes2 Tbl - olive oilpeppersalt1 Tbl - garam masala2 tsp - ginger (fresh)1 clove - garlic2 cups - spinach1 can - chickpeas (garbanzo beans)
1. Put rice on to cook according to the directions.
2. Put the olive oil in a large fry pan
3. Chop the garlic and ginger and add them to the olive oil. Add the curry and garam masala. Cook stirring on medium heat until garlic starts to brown.
4. Strain and add chickpeas, browning slightly while stirring for a couple of minutes.
5. Add tomatoes and spinach, stir, and let simmer for a few minutes, until the spinach is wilted.
6. Add salt and pepper to taste.
7. Serve over rice.
Makes 4 servings.
