Lap-band Friendly: Coconut Pumpkin Soup

Ingredients
1 can Lite Coconut Milk1 can pumpkin puree1 can vegetable broth1 tsp coconut oil1/2 tsp. curry powder1/2 tsp ground cumin1/2 tsp. ground ginger1/4 tsp salt or salt substitute1 packet of truvia
Directions
Finely chop onion
saute in coconut oil for 5 minutes and low/medium heat
add all other ingredients. Bring to just barely a boil and simmer for at least 15 minutes.
Serve.

    No onion in the list of ingredients, needs to be modified - 9/24/16

    I added potatoes (4 pounds) that I cut into cubes and browned and cooked for 5-8 min. I also added garlic and lemon balm, cooked curried chicken (2 pounds). Let it all simmer for 20-30 min. Was very good. - 10/13/10
