Chunky Rainbow Salsa for chips!

Ingredients
1 large red Vidallia Onion1 large Green Bell Pepper1 can (apprx 15 oz) black beans1 can (apprx 15 oz) red or pink kidney beans1 cup diced zucchiniJuice of 3 limes1 Tblsp of dried cilantro
Directions
Dice the Red Onion, Green bell pepper, and zucchini into small cubes (similar in size to chunky salsa.) Put into a medium size mixing bowl or plastic container with a cover.


Rinse the black beans and kidney beans in water until the water runs clear. You may wish to use a spagetti strainer. Gently stir beans into the chopped vegetables.


Squeeze the juice of 3 limes into a separate bowl to ensure you strain out any seeds. Add the lime juice and dried cilantro to the vegetable salad.


Gently toss all of the ingredients to incorporate. Serve with "Baked Tositos Scoops" chips at parties. This chip salad is crunchy and fresh and full of Mexican flavor! (calories for Tostitos chips are not included here)

Serving size is approximately 1/4 cup per person.

Store covered in the refridgerator.
