Lap-band Friendly: Mock German "Potato" Salad

4 slices of pre cooked bacon, chopped1/4 red onions, choped1/4 cup apple cider vinegar1 tsp coconut oil1 packet of Truvia1 14.5 oz (8.8 oz dry) container of hearts of palms, sliced* I purchased the hearts of palms at Trader Joes and drained and used the whole container
Drain and slice Hearts of Palm
Chop Onions and bacon and saute in Coconut oil.
When onions begin to wilt ( 3 minutes) add hearts of palm and continue to saute for 3 more minutes.
Add Truvia and Apple Cider Vinegar and cook on medium high until tossing frequently until cider has been reduced.
Serve warm.
