Lap-band Friendly: Simple Cilantro Pesto

Ingredients
1 cup loosely packed fresh cilantro leaves 1⁄4 cup salted pistachios 1⁄4 cup extra-virgin olive oil 2 cloves garlic1⁄4 teaspoon freshly ground pepper 1⁄4 cup fat free half-and-half
Directions
put all ingredients except the half and half into a small food processor and process until well blended. Next add half and half and puree until smooth.

Store pesto in a plastic squeezable container or ziploc bag. If using a zip lock bag, clip corner and squeeze onto soup.
