Mother's Cranberry- Apple Cake

1 cup vegetable oil2 cups sugar3 eggs3 cups flour1 tsp. baking soda1 tsp cinnamon1/2 tsp. salt2 cups whole fresh cranberries2 cups peeled & chopped apples1 cup chopped pecans1 tsp. vanilla extractContectioner's sugar
Beat oil, sugar, and eggs with electric mixer until smooth. Mix dry ingredients together and add to oil mixture, stirring by hand - dough will be stiff. Add cranberries, apples, pecans and vanilla, stirring well. Bake in greased and floured Bundt pan in preheated 325 oven for 60 minutes - then in 350 degree over for 15-20 minutes. Remove from oven and cool in pan for 15 minutes. Turn out and dust with confectioner's sugar.
