Apple Walnut Bundt Cake

2 cups peeled, diced apples2 Tbsp sugar1 tsp cinnamon3 cups whole wheat flour1 Tbsp baking powder1/4 tsp salt2 cups sugar, preferably natural or turbinado1 cup oil1/4 cup apple juice2 tsp vanilla4 eggs1 1/2 cups chopped walnutspowdered sugar
Preheat oven to 350. Grease and flour a bundt pan and set aside. Combine diced apples, 2 tbsp sugar and cinnamon. Set aside. Sift together flour, baking powder and salt.
Combine 2 cups sugar, oil, apple juice, vanilla and eggs. Beat at hight speed until smooth. Stir in flour mixture. Fold in chopped walnuts and apple mixture.
Pour into prepared pan. Bake 350 55 to 60 minutes, until cake is firm, well browned and begins to pull away from pan edges. Let cool in pan 10 minutes, turn out onto a wire rack and cool completely. Sprinkle with confectioners sugar, or drizzle with glaze of confectioners sugar and small amount of water.
