Cauliflower Chicken Barley Soup

Ingredients
2 Chicken Breasts1 Cup Uncooked Barley2 Carrots2 Zucchini4 Celery Stalks1 White Onion8 Cups Low Sodium Chicken Broth1 Teaspoon Peppercorn1 Bay Leaf
Directions
Dice vegetables to desired size. Dice chicken to bite sized pieces. Combine all ingredients in pot.

Cook on stove at least 60 minutes or until chicken is cooked through and vegetables are at desired texture. This also can be cooked in a crock pot for 6-8 hours on low.

You can easily make this soup vegan by removing the chicken and using vegetable broth instead.

Makes 6 2-cup servings.
