Fast Vegetarian Stuffed Peppers!

Ingredients

1 pkg Uncle Bens fast & fancy broccoli and cheese rice3 Bell Peppers (whatever colored ones you'd prefer!)3-4 lrg mushrooms, chopped1 small onion diced1 cup of broccoli chopped2 tbsp low fat margarine.5 c shredded cheese
Prepare the rice as per pkg instructions.
Preheat oven to 350.
Sautee the onions and mushrooms in the butter until soft, then add the broccoli. Sautee for another few minutes. Add to prepared rice.
Cut the peppers in half lengthwise, seed and core them. Blanche in boiling water for 3 minutes.
Fill peppers with the rice/onion/mushroom mixture and top with the shredded cheese.
Bake in the oven covered for 20 minutes then remove cover and broil until cheese bubbles!
Goes great alongside a spinach salad! Enjoyyy!
