Shrimp Stir Fry with Rice

Ingredients
2 tbsp peanut oil30 medium shrimp, peeled1 c jasmine rice1 pkg frozen or 2 cups fresh stir fry veggies2 tbsp soy sauce
Directions
Rice:
Boil 1.5 C of water
Add 1 C of jasmine rice and reduce heat to simmer
Simmer covered for 10 minutes

Stir Fry
In a large frying pan, warm peanut oil
Add veggies and cook until slightly tender
Add peeled shrimp and cook until pink
Add soy sauce and mix well

I serve it in a bowl with the shrimp and veggie mix on the rice.
