Mama's Top Shelf Cornbread

2 cups cornmeal2 cups rice flour or gluten-free flour blend 2 Tbs Baking Powder2 ½ cups milk2 tsp. Salt¾ cup Sugar4 eggs¼ cup margarine
Preheat oven to 450*
In mixer or blender, combine milk, eggs, and margarine. Combine all other ingredients and add to milk mixture. Mix well. Pour in greased (sprayed with Pam) 13x9x2 pan and bake at 450* for 25 minutes or until toothpick inserted in center comes out clean.
Makes 24 2-inch pieces (roughly 2.5 oz each if you like to weigh your food!)
**Note: This, as well as most gluten free recipes, will have a much better texture if you use rice flour obtained from an Asian market (in the RED bag!) - it is much more finely ground and does not leave you with a gritty texture like some big-name gf brands do!
