Slow Cooker Fajitas

1 lb. beef round steak 14.5-oz can diced tomatoes, drained1 onion, sliced1 green bell pepper, cut into strips1 red bell pepper, cut into strips1 Tbs. chopped fresh cilantro2 cloves garlic, minced1 tsp. chili powder1 tsp. ground cumin1 tsp. ground coriander1/4 tsp. salt8 (8") flour tortillasOptional Garnishes (not included in nutritional info): sour cream, salsa, shredded lettuce, shredded cheese
Place steak in a 4-5 qt. slow cooker. Combine vegetables and seasonings; spoon over steak. Cover and cook on LOW setting 6-8 hours. Shred meat using 2 forks. With slotted spoon, spoon meat mixture over tortillas and garnish as desired.
