Saute' Chicken, Artichoke & Feta

1/2 Chicken Breast1/4 C Low Sodium Chicken Broth1/4 C Feta crumbles6oz Frozen Artichoke Hearts (thawed)1/8 C Fresh Mint (chopped)Salt & Pepper to taste1 tsp. Olive Oil1/2 Tsp Lemon Juice
1) Season chicken w/ salt and pepper, heat skillet with 1/2 tsp olive oil (med heat) Add chicken (12-14 min) Remove.
2) In dirty skillet, add remaining 1/2 tsp of oil (med heat) Add thawed artichokes (3 mins) Add broth, heat to boiling (2-3 mins, med/high heat)
3) Remove skillet from heat, add mint & lemon juice.
4) To serve, spoon artichoke sauce over chicken, top w/ feta. Garnish with mint.
