Crustless Key Lime Pie (Linda's Low Carb)

1 small package sugar free lime jello1/2 cup boiling water8 ounces cream cheese, softened1 tablespoon lime juice, one small limeLime peel/zest, finely grated, one small lime1/2 cup heavy cream (see note below) NOTE from Linda: I couldn't get the cream to get fluffy. I think it should have been beaten until stiff first, then folded into the cream cheese, jello mixture.
Dissolve the jello in the boiling water, stirring for 3 minutes. Beat the cream cheese in a medium bowl with an electric mixer until smooth. Gradually beat the jello into the cream cheese (this will make a mess and splatter all over the place). Add the lime juice and rind. Add cream and whip until fluffy. Pour into a pie plate that has been sprayed with nonstick spray. Chill until set.
NOTE from Soonergirl99/Gina: I beat the heavy cream separate from the cream cheese until the heavy cream was fluffy. I then added the cream cheese mixture.
