Saute 1 small onion, and 1-2 green or other sweet peppers in 1 TB olive oil; cook sweet potato in microwave. Add chopped up eggplant when peppers are tender. Add chopped cooked chicken. Sprinkle with Curry powder to taste (1-3 tablespoons), toss, then sprinkle with flour and toss again. Add 1-1/2 cups milk and one can light coconut milk, stir until thickened. Add 2 teaspoons chicken bullion, and the chopped up cooked sweet potato. Serve over rice.
