Chicken with blueberry Sauce

* Chicken Breast, no skin, 12 ounces * Fontina Cheese, .33 cup, shredded *Apple cider, 1 oz * Wine Vinegar, 1 tbsp * *Grey Poupon Dijon Mustard, 1 tsp * Blueberries, fresh, 1 cup * Thyme, dried, .5 tsp
1. Pound breast approx 1/2 inch. Cut into 3 portions. Spray frying pan with PAM. Sprinkle chicken with salt and pepper. Add chicken to pan; cook 3-5 mins per side or until done. Remove to serving dish.; sprinkle with cheese.
2. Combine apple cider, vinegar, and mustard and stir w/wisk. Add mixture to pan and simmer 1 minute. Add blueberries and thyme and simmer 2 minutes. Stir in butter. Spoon blueberry sauce over chicken.
