Roasted Red Pepper Sandwiches

Ingredients
Philadelphia Cream Cheese, 8 ozOnions, raw, 3 Tbsp.Red/Yellow Bellpepper - roasted or fresh, 1 cupGarlic, 2 tsp Cucumber (with peel), 0.5 cup slices
Directions
Wash and dice veggies into tiny chunks and dab dry with paper towel to remove as much excess moisture as possible. Allow cream cheese to soften out of the fridge for 15 minutes or so and mix together with wooden spoon. Feel free to add dill or various other tasty herbs/spices for added flavor.

As mentioned above, Serve with lettuce and tomato slices on some whole wheat bread, toasted english muffin or even and pita sliced like a pizza and you can't go wrong!
