Egg Beaters Baked Omelet

Ingredients
Egg substitute, liquid (Egg Beaters), 2.5 cup (remove)Cheddar or Colby Cheese, Low Fat, .50 cup, shredded (remove)*Spinach, cooked, 2 cup (remove)Turkey breast meat, 3 slices (remove)Ham, Kirkland smoked honey ham, 3 oz (remove)Red Ripe Tomatoes, 1.50 cup, chopped or sliced (remove)Onions, raw, 1.50 cup, chopped (remove)Olive Oil, 1 tbsp (remove)
Directions
In a medium sized nonstick fry pan add 1 Tbsp. of Olive Oil, heat using medium setting
Add 1.50 Cups chopped onion, cook till translucent
add 3 slices of chopped, cooked turkey breast ( can use deli turkey breast)
Add 3 oz. chopped honey ham ( deli meat used)
1.50 cups chopped fresh tomato
add 2 cups of chopped spinach
Cook all the above ingredients to heat them through ( 5 minutes)

Place cooked ingredients in an 8" x 8" glass cooking dish that has been sprayed with nonstick cooking spray
Pour egg beaters over cooked vegetables
Stir all the ingredients to mix with egg beaters
Add one half cup reduced fat cheddar cheese to top
Place in oven that has been preheated to 400 degrees
Cook for at least 22 - 32 minutes. Check for doneness by cutting into center of omelet, If omelet is dry in the center it is cooked all the way through
