Tomato Zucchini Soup

Ingredients
4-5 Vine-ripe tomatoes (medium)2 large zucchini1 small onion1 clove garlic2.5 cups chicken broth4-5 Tbsp. Olive OilSalt/Pepper to taste
Directions
Cut a small cross in the bottom of each tomato and add to boiling water for about one minute. Transfer to cold water bath and let sit for several minutes until skin peels away from flesh. Meanwhile, peel zucchini and slice into 2-inch strips. Salt fresh zucchini and let sit while dicing the onion.

Sautee zucchini and onion in 2 tbsp olive oil in a large pot. Mince garlic and peel and dice tomatoes while zucchini and onion are sauteeing, then add to mixture. Sautee for five minutes, then add 2.5 cups chicken broth. Bring to a boil, then cover and let simmer for approximately 15 minutes. Add salt and pepper to taste.

Makes approximately 6 servings.
