Pasta Fagiole

Ingredients
1 jar Classico pasta sauce29 ounces diced tomatoes, no salt added1 onion1 cup green pepper1 cup celery1 cup carrots3.5 cups cannellini1 small can low salt V8
Directions
Saute vegetables in a large stock pot. Add tomato sauce and canned tomatoes when onions are translucent. Simmer for an hour then add 1/2 the beans and puree until smooth. Add remaining beans, V8 and water as needed. Simmer another hour.

Add cooked pasta and parmesan to each serving (calorie count not included).

Makes 13 one-cup servings.
