Spinach w Garlic Vinaigrette

Ingredients
1.5 tbsp EVOO1 tbsp white wine vinegar1/2 tsp dijon mustard1/4 tsp ground black pepper1/8 tsp salt2 garlic cloves, minced6 cups baby spinach leaves (approx 6 oz)1/4 cup vertically sliced red onion
Directions
Combine first 6 ingredients in a large bowl, stirring well with whisk. Add spinach and red onion. Toss to coat.
